This sherry vinegar, made from 100% Palomina Fina grapes, is aged for minimum of 2 years in wooden barrels, rather than the standard 6 months. It is rich and complex with a medium-bodied consistency. Notes of fig, almond, and oak are balanced by slight acidity. It's an exquisite vinegar that can be used as an alternative to balsamic.
